On the heels of Chipotle’s popular sofritas rollout, Freebirds World Burrito has also added a vegan option to its Mexican-inspired lineup. The new addition, dubbed Calabacitas, is a tempeh dish featuring hand-chopped vegetables braised in spices including cumin and cilantro.
The Calabacitas can be added as a protein to all of of Freebirds’ various meal options, from burritos and tacos to bowls and salads. The meatless choice is now available in all of Freebirds’ nearly 100 restaurant locations across the country, says the chain.
“The dish was inspired by my grandmother’s recipe,” said Freebirds Culinary Director James Sanchez (a graduate of the prestigious Culinary Institute of America) in a press release.
“We have been looking to expand our menu offerings and tempeh offered an interesting opportunity for both vegetarian and vegan guests as well as those looking for a tasty new alternative.”
Everything from the Austin, TX-based chain is made from scratch, including the Calabacitas. The recipe features roughly-chopped summer squash, zucchini, corn, peppers, and onions. The spiced veggies are then combined with tempeh—a tasty vegan protein made from fermented soybeans.
From Freebirds to Chipotle to Subway, the fact that vegan options are popping up at non-vegan chains all over the country is a sign that the plant-based revolution is most definitely taking hold. So go get that vegan burrito already.
